Irachi Pathiri | Erachi Pathiri | Meat Stuffed Fried Roti


Irachi Pathiri/ Erachi Pathiri is a  popular food item in Malabar, especially during Ramadan. This delicious food item is prepared by stuffing meat in it. You can use chicken, mutton or beef in accordance with your taste.
The bread/roti used to cover up the meat filling is made of all-purpose flour/maida or wheat flour or the combination of both flours. Here I am using all-purpose flour independently to make the roti.

INGREDIENTS
    For preparing the filling :
  • Onion - 1 no large-sized, finely chopped
  • Ginger - 1 teaspoon, crushed
  • Garlic - 1 teaspoon, crushed 
  • Chicken - cooked with turmeric powder, pepper powder and salt. Then shredded (Approximately 3/4 cup) 
  • Turmeric Powder - 1/2 teaspoon 
  • Chilly powder - 1 teaspoon 
  • Corriander powder - 1 teaspoon
  • Pepper powder - 1/2 teaspoon 
  • Garam masala powder - 3/4 teaspoon 
  • Few Curry Leaves
  • Few Coriander Leaves
  • Oil - 2 tablespoons
  • Salt - to taste
    For preparing the roti/bread dough:
  • All-purpose flour - 1 cup
  • Oil - 1 tablespoon
  • Salt - to taste
  • Lukewarm water
  • Oil for frying
INSTRUCTIONS
  1. Firstly let's prepare the filling. Heat 2 tablespoons of oil in a pan.
  2. Add ginger, garlic and green chilly and saute well until raw smell has gone.
  3. Then add chopped onion and salt, and saute well until transparent.
  4. Once it becomes transparent then add turmeric powder, chilly powder, coriander powder, pepper powder and garam masala powder and saute well until raw smell has gone.
  5. Now add shredded chicken. Mix well.
  6. Now taste the salt. If needed, add a little more.
  7. Finally, add curry leaves and coriander leaves and mix well.
  8. Now the filling is ready. Then allow cooling.
  9. Next, let's make the coating. In a bowl take all-purpose flour, 1 tablespoon of oil, and salt. 
  10. Then pour the lukewarm water into this and mix well.
  11. knead well to get a smooth dough(like chapathi).
  12. Divide the dough into lemon sized balls.
  13. Then roll these balls using chapathi roller until you get the thin round pathiri.
  14. Take one rolled out pathiri then spread some chicken filling on it.
  15. Then place another rolled out pathiri on top and gently press together the edges.
  16. Pinch the edges and fold it inwards and repeat this to form a pleated border
  17. Do it the same for all the pathiris.
  18. Heat oil in a pan.
  19. Add the prepared pathiris in the oil once it is heated.
  20. Fry over a medium flame on both sides until golden brown.
  21. Finally, drain over a kitchen towel and serve it.
BONUS TIPS
  • If you are health conscious then you can use wheat flour/ atta instead of all-purpose flour.
  • You can use chicken, mutton or beef as you wish.
  • Use lukewarm water to make the smooth dough.
