Homemade Mayonnaise Recipe | How To Make Tasty Mayo At Home In Blender


Mayonnaise/Mayo is a thick cold condiment or dressing commonly used in sandwiches and composed salads or on french fries. It is also a base in sauces such as Tartar sauce. It is a stable emulsion of oil, egg whites/ egg yolks, and an acid, either vinegar or lemon juice.
The essential part is to add the oil very slowly. If we add the oil too fast and the emulsion will break. Here I am using sunflower oil for its making. Always use good neutral-flavored oil. And also I am using egg whites only.

INGREDIENTS
  • Egg White - 2 nos, at room temperature
  • Garlic - 1 pod
  • Lemon Juice -1/2 Tablespoon
  • Salt - a pinch
  • Sugar - a pinch
  • Neutral flavored oil - 1/2 Cup (like sunflower oil, light olive oil)
INSTRUCTIONS
  1. Combine egg whites, garlic pod, lemon juice, a pinch of salt, and a pinch of sugar in a blender.
  2. Blend for 15 seconds until all are well combined and turns white foamy texture.
  3. Now add a little bit of oil and again process for 15 seconds or a maximum of 30 seconds.
  4. Once the mayonnaise has started to thicken, pour the oil in a slow and steady stream.
  5. Once all the oil has been mixed in, the mayonnaise should be thick and fluffy.
BONUS TIPS
  • Always use room temperature eggs. Otherwise, it will not thick.
  • The blender should be dry.
  • Pour the oil in a slow and steady manner. Once it has started to thicken you can pour the oil in a little quicker.
  • It's better to process in pulse mode.
  • Store your freshly prepared homemade mayonnaise in the fridge in a closed container for 3 days.
  • It's better not to consume by pregnant ladies as it contains raw eggs.
